We are huge fans of simple recipes that DO WORK, and this 15-minute Blackberry Simple Syrup is definitely no exception and the possibilities are endless! Try mixing it into cocktails, or drizzling over cheese plates, pancakes, or a warm brownie a la mode. This incredibly fast and easy-to-make syrup should be a pantry staple all summer long.
Blackberry Lavender Simple Syrup
A small sauce pan
Fine mesh sieve or cheese cloth
2 Cups fresh blackberries
1 1/2 Cups water
1 Cup Sugar
Zest and juice from 1 small lemon
1 Tbs lavender (Optional )
Add water, blackberries and lavender to your sauce pan and bring to a low simmer. Allow to simmer until the blackberries begin to soften. With your spatula gently smash your berries allowing them to fully release all their flavor and color. Simmer another minute or two and then strain your mixture into a small heat-proof bowl to remove all of the seeds and pulp. Gently squeeze the strained mixture to extract all the flavor and moisture, but be careful not to press so hard the skins and seeds push through because we want your final syrup to be smooth and silky.
Return the strained berry liquid back to the sauce pan on low heat and discard the solids. Add your sugar and bring to a low simmer once more. Allow mixture to simmer until it begins to thicken some but be careful not to boil away all of the water content because you will want your final product thin enough to drizzle over or into your recipes. Simmer until you've reached your desired consistency - a longer simmer will result in a thicker, sticky syrup.
Right before you remove your mixture from the heat, add in the lemon juice and zest. If you add this too soon you run the risk of cooking off the fresh tangy juice and your zest may become bitter. Mix in well and allow to cool. Once cool, you may store in a clean glass jar. This recipe will keep for about a month if sealed and refrigerated when not in use.
